I love Chinese history, especially its scope and intellectual depth. This is why it's so annoying to see the video games based on it that come out in the West focus so narrowly on just a few historical periods or perspectives, often with a fantastical component. These games are either based around some indistinct wuxia setting, or else a highly mythologized version of the Three Kingdoms. Chinese history is so much richer than that! Games like Red Dead Redemption, Ghost of Tsushima, or Kingdom Come: Deliverance offer the perfect template for what a Chinese history game could be like, and setting it around the late middle ages or early 20th century would be perfect as well. Given the budgets involved in such games, it may be a while before we see one like it, but the possibilities are just about endless.
